Badam Halwa

Badam Halwa

This is one of my favourite sweets. Apart from the richness of this dish, the nutritional benefits of almonds is an important aspect to mention.These nuts are rich source of energy and nutrients. They are especially, rich in mono-unsaturated fatty acids like oleic and palmitoleic acids that help to lower LDL or "bad cholesterol" and increase HDL or "good cholesterol".

Though the preparation is lengthy and a bit strenuous, it is all worth the awesome taste of this nutty coarse sweet .
I had prepared this dish inspired from vah chef and here are the ingredients:

Badam: 3 cups
Milk : appr. 300ml
Saffron
Ghee: 4 tbsps
Sugar: 3 cups

Preparation:
Soak the badams for about 6 to 8 hrs and blanch the badams.
Then take these badams and grind them in a blender along with milk just enough to cover these badams to a coarse consistency
Now place the pan on the flame and add 2 tbsps of ghee. Then add the badam paste along with few strands of saffron. Keep stirring till it comes to a state where the paste does not stick to the pan. Add another 2 tbsps of ghee and keep stirring . It is important to add ghee at regular intervals to avoid the paste sticking to the pan.
Turn off the flame when the ghee slightly separates at the sides.
Transfer the halwa to a tray and now the halwa is ready to be served!

Sounds yummy bt badam is a bit expensive here =(
